Ingredients
- 2 fish fillets (of your choice)
- 4 ripe tomatoes
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 cloves of garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 tablespoon balsamic vinegar – Fresh basil leaves (for garnish)
Instructions
- Preheat your oven to 400°F (200°C)
- Slice the tomatoes into thick rounds and place them in a baking dish.
- Drizzle olive oil over the tomatoes and season with salt and pepper.
- Roast the tomatoes in the preheated oven for 15-20 minutes until they are soft and slightly caramelized.
- While the tomatoes are roasting, season the fish fillets with salt, pepper, minced garlic, dried basil, and dried oregano.
- Heat a skillet over medium-high heat and add olive oil.
- Place the seasoned fish fillets in the skillet and cook for 3-4 minutes on each side until they are golden brown and cooked through
- Remove the roasted tomatoes from the oven and transfer them to a blender or food processor
- 9. Blend the tomatoes until you have a smooth sauce.
- Pour the tomato sauce back into the baking dish and stir in balsamic vinegar.
- Place the cooked fish fillets on top of the tomato sauce.
- Return the dish to the oven for an additional 5 minutes, allowing the fish to absorb the flavors of the tomato glaze.
- Garnish with fresh basil leaves before serving.
