  • 2 fish fillets (of your choice)
  • 4 ripe tomatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cloves of garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 tablespoon balsamic vinegar – Fresh basil leaves (for garnish)


  1. Preheat your oven to 400°F (200°C)
  2. Slice the tomatoes into thick rounds and place them in a baking dish.
  3. Drizzle olive oil over the tomatoes and season with salt and pepper.
  4. Roast the tomatoes in the preheated oven for 15-20 minutes until they are soft and slightly caramelized.
  5. While the tomatoes are roasting, season the fish fillets with salt, pepper, minced garlic, dried basil, and dried oregano.
  6. Heat a skillet over medium-high heat and add olive oil.
  7. Place the seasoned fish fillets in the skillet and cook for 3-4 minutes on each side until they are golden brown and cooked through
  8. Remove the roasted tomatoes from the oven and transfer them to a blender or food processor
  9. 9. Blend the tomatoes until you have a smooth sauce.
  10. Pour the tomato sauce back into the baking dish and stir in balsamic vinegar.
  11. Place the cooked fish fillets on top of the tomato sauce.
  12. Return the dish to the oven for an additional 5 minutes, allowing the fish to absorb the flavors of the tomato glaze.
  13. Garnish with fresh basil leaves before serving.
