Ingredients

  • 1 cup crumbled feta cheese
  • 4 boneless, skinless chicken breasts
  • 1/4 cup chopped fresh herbs (such as basil, parsley, or oregano)
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • Olive oil for cooking
  • Zest of 1 lemon

Instructions

          1. Preparing the Feta Stuffing:

– In a bowl, combine the crumbled feta cheese, chopped fresh herbs, minced garlic, and -lemon zest. Mix well.

– Set aside the feta stuffing mixture.

         2. Stuffing the Chicken Breasts:

 
– Make a small incision in the side of each chicken breast to create a pocket for the stuffing.
– Stuff each chicken breast with the feta stuffing mixture, using a spoon or your fingers to gently push it inside.
 
        3. Cooking the Stuffed Chicken Breasts:
 
– Season the stuffed chicken breasts with salt and pepper on both sides.
– Heat a drizzle of olive oil in a skillet over medium-high heat.
– Add the stuffed chicken breasts to the skillet and cook for about 6-8 minutes per side, or until the chicken is cooked through and golden brown on the outside.
 
       4. Serving:

– Remove the stuffed chicken breasts from the skillet and let them rest for a few minutes.
– Slice the chicken breasts into medallions and serve them on a platter.
– Garnish with additional fresh herbs, if desired.
